Do you think it would be best to remove the entire xenserver/ directory?

If not, I propose removing the following files:

usr_lib_xsconsole_plugins-base_XSFeatureVSwitch.py: Citrix proprietary
usr_share_openvswitch_scripts_refresh-xs-network-uuids: No license specified
uuid.py: No license specified
