Note that XenServer 5.6 does not have the openvswitch enabled by default; it uses linux bridging. That might explain what you are seeing.
To enable the openvswitch in XenServer, you can do something like this:

$ echo openvswitch > /etc/xensource/network.conf && chkconfig openvswitch on && reboot

Keep in mind though that openvswitch in XS 5.6 is not officially supported and probably out of date...
