Success!  As per Ben's suggestion, this worked:

sudo ovs-vsctl -- add Bridge ent_switch mirrors @m -- --id=@eth0 get
Port eth0 -- --id=@ntop get Port ntop_ent_mon_if -- --id=@m create
Mirror name=ntop-ent select-src-port=@eth0 output-port=@ntop
